ingredients:
- 1 roll ready-to-use puff pastry
- garlic clove, crushed
- 1 onion, chopped
- 1 packet (2509) bacon, chopped
- 1/2 punnet (125g) mushrooms, chopped
- 8 eggs
- salt and pepper
- 1 cup (250ml) grated cheese
- cup (60ml) freshly chopped parsley
- 1 egg, beaten, for the pastry

preparation:
- Preheat the oven to 180°C. Grease a baking dish and line the base and sides with the puff pastry. Place in the fridge until it is needed.
- Heat oil in a pan and fry the garlic and onion until soft. Add the bacon and mushrooms and fry until crispy. Remove from the heat.
- Beat all the eggs together and season with salt and pepper.
- Sprinkle the onion and bacon mixture onto the puff pastry. Sprinkle the cheese and parsley over. Pour the eggs over. Cover the baking dish with another sheet of puff pastry and seal the edges making sure all the sides are sealed.
- Brush the top of the pastry with egg and place in the oven for 30 minutes until the pastry is golden brown and the egg is cooked.
- Serve in slices with tomato sauce.
