Quinoa Breakfast Bowl (1 serving)
A warm, nourishing, high protein bowl perfect for breakfast or a mid day energy boost.
Ingredients
- ½ cup cooked quinoa (about ¼ cup dry)
- 1 small banana, sliced
- 2 tbsp blueberries (fresh or frozen)
- 1 tbsp peanut butter
- 1 tsp honey (optional)
- 1 tbsp shredded coconut
- a splash of milk or plant milk (optional, for creaminess)
Instructions
- Cook the quinoa
- Rinse ¼ cup dry quinoa under cold water.
- Add it to a small pot with ½ cup water.
- Bring to a boil, then reduce heat and simmer for 10–12 minutes until fluffy.
- Let it rest for 2 minutes, then fluff with a fork.
- Assemble the bowl
- Place the warm quinoa in a bowl.
- Add the sliced banana, blueberries, shredded coconut, and a spoonful of peanut butter on top.
- Finish
- Drizzle with honey.
- Add a splash of milk if you prefer a creamier texture.
- Serve immediately and enjoy the warm–cold contrast.
