At the age of 94, he received his second knighthood from Queen Elizabeth II in 2020. He was given this knighthood as a recognition of his contributions to television broadcasting and conservation.

Once he came face to face with Mountain Gorillas in Africa
In 1979 he was in Africa filming a documentary series called Life on Earth. In Rwanda, David Attenborough encountered a group of mountain gorillas. In natural documentary history, it was one of the most iconic scenes captured ever. The group of gorillas accepted Sir David as one of them and it ended up he was playing with baby gorillas.

He has been to the bottom of the Great Barrier Reef
After six decades from the very first scuba diving on the Great Barrier Reef, Sir David Attenborough returned to dive into the deep of the world’s biggest living structure. He used a new type of submarine to go 1,000 feet below the sea surface.

FOR THE CAKE:

·         350g butter, softened

·         350g self-raising flour

·         350g caster sugar

·         6 medium eggs

·         Few drops vanilla extract

·         3 tablespoon milk

·         100g white chocolate, melted

·         100g dark chocolate, melted

FOR THE GANACHE:

·         300ml whipping cream

·         200g dark chocolate, broken into pieces

·         Few drops vanilla extract

·         White chocolate stars, for decoration

·         3x20cm round sandwich cake tins, buttered, floured and base-lined

1. Set the oven to 190°C or Gas Mark 5.

2. Tip the butter, flour, sugar, eggs, vanilla extract and milk into a bowl and beat well until smooth. Divide the mixture evenly between 3 bowls. Stir the white chocolate into one of the bowls and spoon it out into a cake tin and spread out. Stir the milk chocolate into another portion and spoon into another tin and stir the dark chocolate into the final portion, then spread it out in the last tin.

3. Place the cakes in the oven, with 2 on the upper shelf and 1 on lower shelf. Bake the cakes for 25-30 minutes until they have risen and feel just firm to the touch. The cake on the bottom shelf may need an extra 5 minutes as, depending on the oven, it may not cook as quickly as the top ones. Remove from the oven and leave to cool in the tins for about 5 minutes, then transfer to a wire rack and cool completely.

4. To make the ganache: Bring the creamto the boil and pour it over the chocolate. Stir until chocolate melts and mix well, preferably using a stick blender. Stir in vanilla extract to taste. Leave the mixture to cool. Once cold, whisk the ganache until it’s a spreading consistency.

5. Place the white chocolate cake on a serving plate and spread some ganache on the top, then place the milk chocolate cake on top. Spread some ganache over that, then place the dark chocolate cake on the top. Spread the remaining ganache over the top and sides of the cake. Sprinkle over some white chocolate stars. Keep the cake in a cool place until serving.

The cake layers may be packed individually in freezer bags and frozen for up to 3 months. Allow the cake layers to defrost before assembling the cake with the ganache. It’s not recommended to freeze the complete cake.

When planning to visit Budapest, Hungary you should aim for the month of August. It is common all over the world that every country has its own national holiday or some important event that attracts attention of both dwellers and strangers.

If you happen to be in Budapest on August 20th, you will see how Hungarians celebrate Constitution Day; one of Hungary’s most important National Holidays.

However, it is not only about this day being dedicated to the nation’s constitution; it is also St. Stephen’s Day, when Hungarians remember their first king. It was King Saint Stephen who laid the foundations and who brought Christianity to the region and to the pagan Magyar tribes, and united them under a strong Hungarian state and Catholicism.

St. Stephen was his Christian name after he converted from his former name Vajk which he got as a pagan baby, born to King Géza of Hungary and Sarolt the daughter of a Transylvanian Hungarian nobleman. By all odds, this second name choice influenced subsequent life of the King quite much if we go by the belief that a person’s destiny can be predicted through their names. The term “Stephen” means “crown” and “standard.”

When Vajk alias Stephen reached adolescence, an assembly was called together by his father and they decided he would be his father’s successor as the Hungarians’ next monarch. This was perhaps the first sign that Vajk was going to bring a change in the lives and ways of the Magyar tribes.

Until then, according to the tribal customs, the right of succession went to the eldest close relative of the ruler. So not too surprisingly, following the death of Stephen’s father in 997, conflict burst out concerning the rightful succession. Stephen and his uncle Koppány, a pagan chieftain, battled for the status and power of Grand Prince of the Hungarians.

The battle was won by Stephen, but it wasn’t solely his own Magyar supporters who helped him to this victory. Stephen had married Giselle of Bavaria, daughter of Henry II The Wrangler just a few years before his father’s death and the German in-laws helped the future king to his pedestal.

His coronation as King of Hungary was in 1000 and his reign lasted for 38 years. During his reign he largely expanded the Hungarian Kingdom and spread Christianity in the Carpathian Basin. In one of his first decrees, for example, he ordered that every ten village had to build a church and he invited foreign priests to Hungary. He also established counties in his kingdom to organize the administration of the country.

He was canonized on the 20th of August 1083, becoming one of the most favoured saints in Hungary. His remaining right hand, preserved whole indicating his saintly nature is called the Holy Right Hand or simply the Saint’ Right Hand. Today it can be viewed at St.Stephen’s Basilica as a relic.

On August the 20th you can experience a widespread and varied series of programs in Budapest. The state programs usually take place in front of the Parliament at Kossuth Square and at Heroes Square. The Hungarian flag is hoisted, generally marching bands play, there are archery shows, dances, traditional Hungarian crafts workshops, ox and poultry roasted on open fires.

Other festivals take place along and above the Danube. One of the most spectacular ones is the water and air parade. While the fireworks light the summer night skies, various dances tell the story of how Hungary was founded.

DID YOU KNOW?

The Crown of St Stephen was recovered after missing for decades by US soldiers at the end of World War II. It was hidden in an oil drum. It was kept safe at a Ft. Knox vault for 32 years before being returned to Hungary in 1978 by President Jimmy Carter. Today it can be seen in the Hungarian parliament in Budapest.

It is no surprise that Pick Winter Salami is among the most popular Hungarian food-related Hungaricums. It is distinguished by its delicate spice mix, its wide girth, and its “noble mould“. The expression “téliszalámi” recalls old times when salami could only be manufactured in the winter. It is available in nearly every Hungarian food shop and its logo can be found on the handball team’s outfit in Szeged, where the salami is produced.

Everyone knows the name Pick in Hungary. But what many Hungarians don’t know is that the company, the country’s largest pork processor, was founded by a Jewish man, who might not have eaten his own signature product, and who used his pork profits to build one of the country’s grandest synagogues the monumental Szeged Synagogue – the second largest in Hungary -, which was finished in 1907.

Márk Pick started producing the well-known salami in 1869, in Szeged, after he had returned from Italy, the homeland of salami, with some sausage makers. The large-scale production began in 1885. It quickly captured the world and was awarded a bronze medal in the Paris World Fair in 1900.  

Márk Pick died in 1892 and his widow handled the business until their son, Jenő, took over in 1906. It was the beginning of a new age in the history of the factory. He purchased the bankrupt “Tiani” salami factory in the neighbourhood, so the whole real estate at the River Tisza belonged to the Pick family.

Jenő Pick aspired to bring about great changes with modern instruments. He had a good sense for the market, he saw the importance of promotion. Salami became the leader product in the first decade of the 20th century.  By 1939, the Pick factory was the second largest food processing plant in Hungary. In 1944 the Nazi Germany invaded Hungary and Jenő had to leave Szeged with other, approximately 9,000 Jews. He arrived in Budapest and survived the war under the protection of the Swedish Embassy. In 1948, the socialist government nationalized the company. Jenő visited Szeged to see if the factory was still there, but later returned to Budapest where his children supported him until he died.

In 2007, the “Winter Salami” gained European Union PDO status. Eventually, the Pick factory was bought out by other salami production companies, including Ringa in 2007 and Herz in 2010, and lost connection with the Pick family.

According to the original recipe the salami was made of donkey meat, and flavoured with a secret spice mix.  Originally, the salami was encased in horse intestines, later it was replaced with cellulose. After a while, however, there were not enough donkeys left, so another type of meat was needed to replace it.

Pick found the solution to have a comparable taste, and it was elder sow meat. The sausage making process was similar to other methods, except that he had used horse casings followed by a cold smokingpreservation of the salami, and finished with a precise drying and ripening procedure. With this new process the salami became covered with magnificent mould, giving the product a unique and characteristic smell and taste. Mould fungi need a chilly temperature and suitable humidity to settle down. Therefore, the factories were established at riversides, such as the original Pick Salami factory by the River Tisza.

The Pick family established something remarkable in the form of its legendary salami, which has become a Hungaricum, a worldwide known, tasty, and desired product. Excellent quality, carefully selected raw materials and a strict quality assurance system guarantee that their Winter Salami will remain as remarkable as it was when it was first created.

 INTERESTING FACTS

• Paprika did not originally feature among the seasonings used in Pick salami; it was only later that paprika-flavoured (“choice”) and “spicy” salami were introduced
• The principal guarantee of quality was the salami masters with their outstanding expertise. Lake Bokodi

Lake Bokodi offers an interesting site for visitors, as the cooling pond houses the popular tourist attraction, the Bokod Floating Houses. As the lake is used as the local power plant’s cooling pond, it never freezes, therefore the tiny stilt village is built on the water. The lake and the floating village became a beloved attraction back in 2014, when the popular search engine, Bing, used a moody photo of the misty cabins as their cover photo. Before this, only the locals and dedicated fishermen were aware of the picturesque spot.   

Tarn of Megyer-hegy

The Tarn of Megyer-hegy is situated in Borsod-Abaúj-Zemplén county. It is an attractive hiking and climbing spot as it is surrounded by large cliffs and can only be reached on foot. Its hiddenness and secluded location add to its charm and make it a popular tourist destination. The artificial lake once functioned as a quarry, and now offers one of the most gorgeous views in the entire region. 

Tarn of Jósvafő

Hidden in Jósvafő village in the Aggtelek National Park, the Tarn of Jósvafő is a beautiful turquoise lake surrounded by trees and forests. It is situated close to the Baradla cave, the largest stalactite cave in Hungary, so you get the chance to visit two unique spots in one day. The turquoise lake was created back in the 1930s from the spring in the same area. The spring has been used as a mill and a way to use hydroelectric power. 

Lake Hévíz

Being the second-largest thermal lake in the world, Lake Hévíz is one of the most popular destinations for both domestic and international tourists. It is visited by people from all around the world for the lake’s healing properties. The Hévíz Spa is built around the lake to help visitors enjoy the benefits of the healing lake. The water temperature can reach 25 °C in the winter and 35-36 °C in the summer, as the water is constantly moving with warm water moving upwards to the surface. This movement helps to keep the lake warm while providing a special massaging effect to the human skin. 

Lake Fertő

Lake Fertő is a shared gem between Hungary and neighbouring Austria. It is the biggest saltwater lake in Europe. The lake and its surroundings are a natural marvel with unique biodiversity and a scenic landscape. The lake is on the border of the two countries and is also bordered by two geological regions: the Little Hungarian Plain and the Sopron Mountains. The lake is Europe’s westernmost steppe lake, making it a unique home for some migratory birds, plants and other wildlife. 

Lake Deseda

Lake Deseda located in a hidden corner in the north of Kaposvár is a lesser-known gem in the country. It was made by raising a dam in the 1970s for industrial utilisation. The lake is only 8 km long and is bordered by nature on one side and the city of Kaposvár on the other. On the lake’s peninsula, visitors can learn more about nature and the lake in the local arboretum, while cyclists can take a 17 km long track around the lake.

Lake Fehér

As part of the Kiskunság National Part, Lake Fehér is the largest saltwater lake located entirely in Hungary. The lake and the surrounding wildlife are carefully protected as it homes 300 different bird species and is a popular layover for many migratory birds in Europe. During the migration period, cranes, wild geese and teals are visible on the lake making it a perfect spot for bird and wildlife enthusiasts as well as nature photographers. 

Lake Hámori

Lying among the mountains in Lilafüred, next to the castle-hotel, Lake Hámori has a unique atmosphere. The lake is surrounded by beautiful forests with misty treetops. Taking a boat tour on the emerald-coloured water gives an amazing view of the mountains in any season, while hikers can discover the valley by foot or bike. Lilafüred, the “Pearl of Bükk” is stunning in itself, but Lake Hámori is the cherry on top and a significant element in the region’s visual identity.
