According to her former personal chef, Darren McGrady, she (almost) always ate healthy. He often turned popular comfort foods into healthier versions she could enjoy without the guilt. Learn what she ate over and over again. 

Stuffed Peppers

Stuffed peppers was one of Princess Di’s favorite dinners. This good-for-you dish was packed with veggies like zucchini and mushrooms, so we can see why she loved it.

Fish

The Princess of Wales dined on fish frequently, especially because she didn’t eat red meat. It was a healthy option that could be served for dinner many nights of the week. 

Tomato Mousse

Chef Darren McGrady made an incredible tomato mousse Diana loved. But since she wanted to cut out fat from her diet, she made him create a fat-free version for her. Of course, he obliged.

Lamb

For special occasions, Princess Diana served lamb to her guests. It was a rare occurrence when she ate meat, so this was an indulgence

Poached Chicken

Lady Di let her two sons eat whatever they wished when they were with her. In order for her to share a meal with them, her chef made healthier versions of their not-so-healthy dinners. For example, when they indulged in roast chicken, she’d dig in to poached chicken.

Stuffed Eggplant

Stuffed eggplant was a variation of Princess Diana’s favorite dinner: stuffed peppers. It was another veggie-loaded dish she’d eat often.

Salad

Salads were abundant in Princess Diana’s diet. She was concerned with eating healthy, so a nutritious salad was always a good dinner option.

Fresh Juices

Drinking homemade vegetable juice was another way Diana stayed healthy. One recipe consisted of carrots, celery, spinach and parsley.

Fat-Free Foods

When she cut fat from her diet, her chef created many fat-free versions of classic comfort foods. This was a challenging but energizing task for him.

Bread and Butter Pudding

Diana’s favorite dessert was bread and butter pudding. It’s like bread pudding in America, but also with a little like crème brulee. She’d often sit with the chef while he prepared it, snacking on the raisins while they chatted.
