A delicious chicken pie to feed the whole family. The chicken and leek filing is tasty and moist, topped with ready-made puff pastry.

Ingredients

  • 1.5kg free-range chicken
  • 1 carrot, peeled, cut into chunks
  • 2 celery sticks, cut into chunks
  • 2 onions, peeled and chopped
  • 2 bay leaf
  • 1 tbs olive oil
  • 2 leeks, trimmed and sliced thickly
  • 150g bacon lardons, smoked or unsmoked
  • 60g butter
  • 60g plain flour
  • 3 tbs crème fraîche, optional
  • 1 tbs coarse-grain mustard
  • a few thyme sprigs
  • salt and ground black pepper
  • 375g pack ready-made puff pastry
  • a little beaten egg
  • 1.5-2 litre (2½-3½ pints) pie dish

Preparation

1. Put the chicken in a large pot with the carrots, celery and an onion. Add a bay leaf and pour in enough cold water to cover. Put a lid on the pan, bring to the boil, then simmer, uncovered, for about 45 mins until the chicken meat starts to fall off the bone.
2. Take the chicken out and set aside for about 20 mins. Put the pan back on the heat, bring the stock to the boil and simmer for an hour to reduce it. As soon as the chicken is cool enough to handle, take the meat off the bones and add the bones to the stockpot for extra flavour.
3. Heat the oil in another pan, and add the other onion and leeks. Fry for about 5 mins, stirring. Add the bacon and fry for 5 mins more. Put into pie dish with bite-sized chunks of chicken.
4. Add the butter and flour to the pan, and cook, stirring to make a paste. Remove bones before gradually adding 600ml (1 pint) of the hot chicken stock to make a smooth sauce. Let it boil for a couple of mins, then add the crème fraîche, if using, and the mustard, the other bay leaf, thyme leaves and seasoning. Pour over chicken and leeks in the dish and stir well. Leave to cool.
5. Roll out the pastry just a little larger than the top of the pie dish and cut out. Brush the edge of the dish with egg, fit some trimmings round it, then put the cut-out pastry on top. Press down well to seal, trim off excess pastry and roughen up edges. Roll out trimmings to make decorative “leaves”. Make a small hole in the top and arrange the “leaves” on the pastry top. Chill the pie while the oven heats up.
6. Set the oven to Gas Mark 6 or 200°C. Heat a baking sheet in it. Brush pastry with egg. Put the dish on the baking sheet. Bake for 30-40 mins until the pastry is golden and the filling is bubbling up.

For making the dough you need flour, yeast, salt and water, after frying it until golden brown this becomes a crunchy yet fluffy base for various toppings. Though traditional ones are still way too much common, being introduced to Lángos with modern toppings such as ham or bacon is also usual in some places even Nutella especially for those who love sweets.

The history of Lángos goes back to the 15th century when it was baked near flames in brick ovens (thus the name: “láng” means “flame” in Hungarian). There were two types: sweet and savory. The sweet version was adopted by neighboring countries while Hungarians preferred savory Lángos.

One’s topping choices depend on their personal preferences. Some prefer it plain, brushed with garlic sauce and sprinkled with salt while others like the classic variation-“sajtos-tejfölös” (cheese and sour cream). However, in rare cases Lángos can be topped up with cottage cheese and dill or Bolognese sauce or even beef stew!

In other countries too there are similar deep-fried dishes. For example, Slovakia has Lokše, which is a potato-based flatbread often served with duck or goose.

India offers another type called Bhatura, a deep-fried bread made from white flour and frequently eaten together with chickpea curry for a sumptuous meal.

Mexico also has Sopapillas. These are doughy puffs that are typically served drizzled with honey instead of savory foods.

Panzerotto is the Italian term for a savory dough pouch that is filled and fried, traditionally in lard. It has different names from region to region. In Puglia it is called calzone, while in the Naples and the surrounding areas it is also known as Pizza Fritta (fried pizza)

Its distinctive combination of flavors as well as textures is what makes Langos a darling delicacy not only in Hungary but even beyond. Whether you choose to go the traditional way of cheese and sour cream or try out some new toppings for Langos, it always remains ultimately satisfying on the tongue.

Pentecost is one of the Christian feasts, celebrated on the fiftieth day after Easter Sunday. It commemorates the descent of the Holy Spirit upon the Apostles and other followers of Jesus.

Pentecost is also called Whitsun, Whitsunday, or Whit Sunday in the United Kingdom and other English-speaking areas.

For most Christians, Pentecost represents the birthday of the Church, signified by the descent of the Holy Spirit.

The events took place on the day of the Pentecost, in Jerusalem, at 09:00 (“the third hour of the day,” according to Jewish timekeeping). The community of Christ’s disciples, approximately 120 people, was gathered “into an upper room” in a building that Tradition locates on Mount Zion. The Tradition also says that it was the same room where Jesus ate His Last Supper. The events are very well described in Acts 2:1-4:

“And when the day of Pentecost was fully come, they were all with one accord in one place.

And suddenly there came a sound from heaven as of a rushing mighty wind, and it filled all the house where they were sitting.

And there appeared unto them cloven tongues like as of fire, and it sat upon each of them.

And they were all filled with the Holy Ghost, and began to speak with other tongues, as the Spirit gave them utterance.”

According to the Book of Acts, the experience of the Pentecost was noticed by all in the large crowd, causing confusion and inspiring awe:

“When they heard this sound, a crowd came together in bewilderment, because each one heard them speaking in his own language…. Then how is it that each of us hears them in his own native language? …Amazed and perplexed, they asked one another, “What does this mean?”” Acts 2:6-12

Then the Apostle Peter, standing with the eleven other apostles, spoke to the crowd. He explained that these strange events had been predicted by the prophet Joel, and that Jesus’ resurrection from the dead and exaltation to heaven had been prophesied by David. Peter then exhorted his listeners to turn to Christ. When Peter was asked what people should do, he responded by saying “Repent, and be baptized every one of you in the name of Jesus Christ for the forgiveness of sins, and ye shall receive the gift of the Holy Ghost.” The Bible suggests that about three thousand responded to Peter’s sermon.

Customs for celebrating Pentecost

In Italy, it was customary to scatter rose petals from the ceiling of the churches to recall the miracle of the fiery tongues. The Italian name Pascha rossa comes from the red colors of the vestments used on Pentecost.

In France, it was customary to blow trumpets during Divine service, to recall the sound of the mighty wind that accompanied the Descent of the Holy Spirit.

In the United Kingdom, the gentry amused themselves with horse races. Whitsunday remains one of the Scottish term days, at which debts are paid and leases traditionally expire, but this Scottish Whitsunday is now always considered to fall on May 15.

In Poland, Pentecost is called “the Green Holiday,” when people decorate their houses with green branches, which—according to tradition—are said to bring God’s blessing upon the home and the people living in it. Another custom, which is slowly becoming rare, is making processions to the fields, where the crops are blessed.

In Ukraine, Pentecost is called “Green Sunday.” The inside of churches are covered with fresh branches of green deciduous trees. Green branches are also placed on the outside banisters and doors of churches and people also place a green branch on the door of their homes. Clergy and altar boys also wear green vestments as do many in the congregation. Green symbolizes new life and Pentecost is thought to be the birthday of the church.

The following Monday is a holiday in much of Europe. The day is known as Whit Monday in England, Wales, and Ireland, and is also celebrated in Iceland, Norway, Denmark, The Netherlands, Poland, Belgium, parts of Switzerland, Germany, Austria and Hungary.

Date of Pentecost

Pentecost does not fall on the same calendar date every year, yet according to Church tradition, Pentecost is always seven weeks after Easter Sunday; that is to say, 50 days after Easter (inclusive of Easter Day). Said otherwise, it falls on the eighth Sunday, counting Easter Day.

The earliest possible date is May 10, and latest possible date is June 13.
