When I became Princess Diana’s chef, she got her life back on track. She was patron of 119 different charities. She said, “Darren, you take care of all the fats.” “And I’ll take care of the carbs at the gym.” Now, this meant that she was now eating healthy. And her go-to breakfast was something called overnight oats.

Now, today, overnight oats are really popular. Everybody’s eating them. But they date back to 2012. That’s when you couldn’t even go on social media without seeing a recipe for overnight oats. But Princess Diana was eating overnight oats almost 20 years earlier in 1993. Where did she get the recipe from? Did she invent them? No. She actually went to a Swiss health clinic. And there she had these overnight oats and they were actually called Bircher muesli. And they were invented by a Swiss nutritionist and she thought they were really, really good. And all the ingredients were super healthy. She stole the recipe, came back and said, “Darren, I want these for breakfast every day.”

Oats are just rich in fiber. And perfect for breakfast every morning. But when you actually have them cold with a little liquid over them and they’re steeped overnight. And then you add all these ingredients there too, it just takes them to the next level. And all these individual nutrients going into the breakfast dish make it amazing. And that means adding a liquid to them. And I use rolled oats in there. You can use the pinhead. Don’t use the quick oats or anything like that. The rolled oats, in my opinion, they’re the best.

So I’m adding freshly squeezed orange juice into my oats. The oats, covered with plastic then and put them in the refrigerator. And leave them overnight. Overnight oats. In the morning, the oats will have swelled up. Absorbed most of the liquid. Now, into there, I’m going to add some Greek yogurt. Greek yogurt is an incredible protein. And just what you need really to start the day. You know, you add the oats and you soak them in the whiskey. And then you add the cream in there, the whipped cream. And lots of sugar. Well, this is a lot healthier and oh, so much tastier too.

So just lightly fold in the Greek yogurt. And once that’s folded in, I’m going to put some honey in there too. I like to use raw honey. And with the raw honey, I say just do that to taste. If you like it really, really sweet, then obviously put a little bit more in. But not too much. Then I’m going to put some lemon juice in there too. Now, there are many different things that you can add into the dish now. Uh, lots of different fruits, you know, all the berries and the strawberries and the chia seeds are really popular now too. But this is the classic traditional dish that Princess Diana had for breakfast every morning.

So in there, we take some apple. And I like the honey crisp apples. They’re sweet. And leave the skin on as well. And then you’re just going to grate this into those oats. Stir the apples into the mixture. And we’ve got texture, we’ve got fiber. We’ve got protein. We’ve just got everything in there. Then I’m going to take a few blueberries. And I’ve got these really, really big jumbo blueberries because they just have so much flavor to them. And I’m going to drop those in. And a few walnuts too. Walnuts, super food, super healthy. And then just fold those in as well.

Then I’m going to put it into the glass. Now, I have to admit that when I was making this at Kensington Palace for Princess Diana, it was so good. I actually used to double the recipe so that the chef got it for breakfast too. And some blueberries. Princess Diana’s overnight oats. How easy are they to make? And super healthy too. You can soak the oats overnight and all you do is throw the fruit in there and the nuts in the morning. And there you go. And it’s so much cheaper than buying them at the store ready-made.

Ingredients

2 large eggs, room temperature

2 cups whole milk

1/4 cup butter, cubed

3/4 cup sugar

1/4 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1 teaspoon vanilla extract

4-1/2 to 5 cups soft bread cubes (about 9 slices)

1/2 cup raisins, optional

VANILLA SAUCE:

1/3 cup sugar

2 tablespoons cornstarch

1/4 teaspoon salt

1-2/3 cups cold water

3 tablespoons butter

2 teaspoons vanilla extract

1/4 teaspoon ground nutmeg

Directions

In a large bowl, lightly beat eggs. Combine milk and butter; add two eggs along with sugar, salt, spices and vanilla. Add bread cubes and, if desired, raisins; stir gently.

Pour into a well-greased 11×7-in. baking dish. Bake at 350° until a knife inserted 1 in. from edge comes out clean, 40-45 minutes.

Meanwhile, for sauce, combine the sugar, cornstarch and salt in a saucepan. Stir in water until smooth. Bring to a boil over medium heat; cook and stir until thickened, about 2 minutes. Remove from the heat. Stir in the butter, vanilla and nutmeg. Serve with warm pudding.

But did you know there was another Lady Diana Spencer—an 18th century ancestor who was also destined to marry the Prince of Wales in a fairytale wedding?

The Early Years

Born in London in 1710 to the English statesman Charles Spencer, 3rd Earl of Sunderland and Anne Spencer, Countess of Sunderland, Diana was the youngest of five children and the favorite grandchild of Sarah Churchill, Duchess of Marlborough—one of the most powerful women in England and close friend to Queen Anne.

Affectionately called “dear little Di” by her family, Diana’s first taste of tragedy was at six years old with the death of her mother.

When her father remarried, the couple had three children, but each one died in infancy. Two died shortly after birth, with a third—her little brother William—dying before he was two years old.

Her next heartache came with the death of her father when she was 12, making her an orphan, followed shortly by the passing of her grandfather, the Duke of Marlborough. Diana was now entirely in the care of her grandmother, the Dowager Duchess of Marlborough.

As she grew up, Diana became a tall, fair-haired and attractive young lady with a compassionate nature and charming personality.

Suffering from the effects of gout, her grandmother found it painful to write and so Diana became her full-time assistant, writing letters that her grandmother dictated.

They became inseparable and her grandmother said of Diana that she had more sense than any woman she knew.

The Royal Marriage Plot

When it was time for Diana’s coming of age, both her looks and her relationship with the wealthy Dowager Duchess, made her one of the most eligible high-society brides in the country.

Among her suitors were the Duke of Somerset’s grandson, the Viscount Weymouth, and the Earl of Shaftesbury. The Earl of Chesterfield proposed marriage by writing to the Dowager Duchess while traveling in the Netherlands in 1731:

“The person, the merit and the family of Lady Diana Spencer are objects so valuable that they must necessarily have … caused many such applications of this nature to Your Grace.”

All were turned down. None were good enough for her granddaughter. The Dowager Duchess wanted to reach higher—to the top.

The next great tumult in Diana’s life was developing a disfiguring skin disease, for which the Dowager Duchess paid a princely sum to have treated by a prominent surgeon.

Waiting for the right suitor was proving costly, so the Dowager Duchess put her plan into action. Aware of his debts, she offered the King’s eldest son, Frederick, Prince of Wales, the enormous sum of £100,000 to marry her granddaughter. A date and secret location were agreed upon.

The Prime Minister Foils the Plot

Everything was going swimmingly until the Prime Minister, Robert Walpole, caught wind of the plan through his network of spies.

For diplomatic reasons, he preferred a European match and wanted the Prince to marry Princess Augusta of Saxe-Gotha, a duchy of the Holy Roman Empire.

Alas, Diana would not get her royal wedding, and time was of the essence, so the Dowager Duchess settled on the Duke of Bedford’s younger brother, 21-year-old Lord John Russell, presuming that he would eventually become Duke of Bedford himself.

Diana came with the handsome dowry of £30,000 and another £100,000 on the death of the Dowager Duchess.

Two years into the marriage, on the untimely death of her brother-in-law, Diana’s husband inherited the Dukedom—just as her grandmother had predicted—and became Duchess of Bedford.

That same year, the pregnant Lady Diana was thrown from her carriage in an accident that caused the premature birth of their son, John.

Sadly, more tragedy was to beset Diana as her little boy died the day after his baptism.

The Duke was now desperate tofather an heir and just a few months after the death of their son, the Duchess was pregnant again. But the hand of fate was not on her side and she miscarried, only to be blamed for not taking enough care of herself.

Diana’s Demise

In the spring of 1735, the Duchess’s morning sickness signaled that she was pregnant for a third time.

But all was not as it should be. She started to lose, rather than gain, weight, and was diagnosed as having tuberculosis.

The Dowager Duchess insisted she be moved to Southampton House in Bloomsbury Square.

And it was there that she died in late September of 1735 at the age of 25.

A Princess Reborn

226 years later, a baby was born to Viscount Althorp, the direct descendant of Lady Diana’s brother John.

Christened Diana, she would get to marry her Prince … and the rest is history.
