One of the most popular foods in the world, pizza has become unique and variants have evolved based on culture and preference. There are so many variations, Italy even proposed that it be proclaimed a protected landmark.

On the PBS Idea Channel, Mike Rugnetta delves into the world of pizza, outlining its humble beginnings (in ancient times, people used “bread as a plate”—pizza began as a simple meal that quickly took on a life of its own) and its ever changing, occasionally polarizing ways of being served.

Our historical pizza journey begins with the iconic New York City Slice. In New York City alone, there are an estimated 2,000 pizza shops, the first of which that we know of having made its NYC debut in 1905 at a restaurant called Lombardi’s. This thin slice is designed for quick service—a plus for the diner on the go.

The New York City slice was developed off the template of Neapolitan pizza; the simple combination of bread, cheese, and tomatoes was considered low-class food at the time, even though these days we classify it as fancy pizza. I’d say we can probably blame that on the “less is more” design standard.

As we move through the history of pizza we learn about the focaccia-based square Sicilian slice, which evolves into the Grandma slice, which evolves into deep-dish. In other words, pizza is the Pokemon of the food world. (The video doesn’t say that, I’m just calling it so.)

Chicago style deep-dish pizza arrived on the scene in the 1940s. This evolution of the Sicilian pizza was uniquely localized, and its preference has divided pizza fans throughout the ages.

Pizza’s origins may be in Italy, but the dish has become an all-American pastime, as proved by the proliferation of frozen delivery and pizza delivery. In 1961, Dominick’s Pizza, later renamed Domino’s, invented the idea that “pizza comes to you.” This seemingly obvious idea revolutionized the industry and how we consume the savory pie today.

If we’re learning about the history of pizza, we inevitably end up with leftover pizza, a dish that magically transforms itself overnight into a different meal entirely. As Rugnetta so eloquently puts it, leftover pizza is “an artifact that remains commemorating D&D games, or Netflix marathons, all-nighters, hack-a-thons and various get-togethers.” Mmm, leftover pizza. So many memories, all of them delicious.

The eighth and final slice in this rundown is the international slice. Pizza has become such a global phenomenon that the pie takes on flavors and distinctions characteristically local to its origin. In other countries you’re likely to find toppings as varied as curry, tuna, and even Vegemite.

Pizza Mad Millions

Every day, somewhere in a quiet town or major city, pizza-mad individuals gather to consume a staggering 100 acres of pizza every day. That’s about three billion pizzas every year. Pizza then had fresh cheese, pesto instead of tomato sauces and fewer toppings.

Some of the earliest references to chicken being fried appear in cookbooks and recipes from the early 1730s.  

Scots slave owners are thought to have given the recipe to their African slaves and after emancipation, many enterprising black female entrepreneurs made a business of selling fried chicken and other portable foods to passengers on the railways. White travelers reached out the window to buy tasty food, and that’s how smart black women started the fried chicken business in America. Fried chicken is just one of many delicious taste treats perfected and saved by enslaved expert chefs.  

Today, fried chicken is the most consumed meat in America. The average American eats nearly a hundred pounds of chicken every year with much of that as fried chicken, chicken tenders, wings, or nuggets. Chicken isn’t just the comfort food of choice for Americans. No, now the humble fried chicken is the bird that conquered the world. Rapidly growing popularity in Korea, Japan, Egypt, and many more countries results in massive amounts of the tasty dish consumed worldwide. Experts estimate people eat over 55 million chickens globally with a lot of it sold as fried chicken.  

Macaroni and Cheese

It is available in boxes, bags, and microwave-ready containers. Thousands of restaurants and fast-food places keep it as a permanent menu item and everyone’s grandma made the best they ever had. Mac and Cheese is ubiquitous but where did it come from?  

Many food historians point to macaroni pudding recipes from Italy discovered by Thomas Jefferson. This is where Thomas Jefferson’s enslaved chef James Hemmings enters the picture. The Hemming version of classic Italian pasta and cheese popularized the new, dish with its savory flavor and creamy texture. Hemming’s skill as a chef earned him his freedom and the reputation of one of early America’s most brilliant chefs.  

Over time, the dish developed into the creamy side children fight over and it is on the table at nearly every barbecue, family reunion, and tailgate supper. Many food historians believe the modern baked macaroni recipe goes back to the recipe popularized by Fannie Farmer in 1946. She published her macaroni and cheese recipe in her Boston Cooking School Cookbook.

Chili

But, just where does chili come from and why is it so popular? 

The ingredients found in modern chili recipes come from many sources. The cumin originates in the Canary Islands, the chili peppers along the Mexican-Texas border, and Native Americans. Many food historians now think the earliest version of chili got served to Cherokee chief Sequoia in 1842 by the natives living along the Rio Grande River valley. They reported enjoying the fiery meat and pepper dish. 

The word Chili comes from the Mayans in Mexico. They cultivated and used capsicum peppers for food and beverages. In later years Tex Tex-Mex chefs refined the dish to create the beefy dish Texans revere. 

From there, chili traveled east to get find the recipe packed with new flavors, different ingredients, and a taste of old Europe. In the Midwest, the Macedonians discovered chili, and they got busy adding new spices, tomato sauces, and even cacao powder. Then, simply serve it up on a plate of spaghetti or a hot dog. 

The recipe traveled on and grew with beans, ground meats, and new varieties. Soon Chili cooking competitions popping up everywhere challenged the skills and recipes of hometown favorites. People discovered white bean chili, chicken chili, and even vegan chili with lots of meaty mushrooms. Variety and ease of cooking with crock pots and modern instant cookers mean chili con carne is likely to remain one of America’s favorite comfort foods.  

BBQ

Love BBQ? Then you can thank the Taino people of the Caribbean for this delicious American favorite. Nationwide, low and slow is the state religion for great-tasting beef brisket, pork butts, ham and chicken. Called barbacoa in their native language, cooking meat over coals soon became a set of regional styles and traditions with a wide variety of meats, cooking styles, and sauces based on the things available in each locale.  

Out West, brisket is king and often cooked on Mesquite wood with dry rubs containing cumin and chili powder for kick. In the southeast, pork shoulders, pork butts, and whole hog BBQ cooked over hickory and fruit wood create unique flavor profiles. In the Carolinas, sauces are mustard and vinegar-based. Want a Domino’s for dinner? Well, it might be cheaper to fly to Italy and eat a pizza in the country that invented it. That’s, according to Callum Ryan, one of those young influencers on the web, who wanted to see if it could actually be done.

One Domino’s pizza can easily set people back £19.99, and that’s ‘before you think about delivery’, Callum says.

After finding a ridiculously cheap last-minute ticket to Milan for £8, he put his idea to the test. Callum films himself arriving in the glamorous city, before sitting down for what looks like a Margherita he says cost less than £10. His overall expenditure came to £17.72, supposedly lower than it would have cost him to stay at home and order in.

What Callum failed to mention was how much it cost him to get from the airport to the restaurant, and whether he even paid for a return ticket. Lucky Callum also got a complimentary glass of prosecco and a pesto pizza roll at the top-rated restaurant.

He decided to buy a drink to go with the pizza, but said this was an ‘optional extra’ so didn’t include it in the overall cost. Viewers on TikTok were understandably shocked by the good value, with one saying: ‘Is no one going to acknowledge the fact he bought a plane ticket for £8?’

Study of 1,267 types of pizza finds that half contained more than 6g of salt, an adult’s recommended daily allowance.

Some takeaway and prepared pizzas contain almost three times an adult’s recommended daily intake of salt, the same as eating seven Big Mac burgers, a survey has revealed. In all, 586 (73%) of the 802 restaurant and takeaway pizzas analysed were found to have more than six grammes of salt, which is the maximum that government advisers say people should consume in a day.

Both Papa John’s stuffed-crust sausage and pepperoni pizza and Domino’s hotdog stuffed-crust pepperoni passion pizzas contain 16g, which equates to almost three teaspoonfuls of salt.

A survey of 1,267 pizzas by Consensus Action on Salt and Health (Cash) found that overall, 612 (48%) had more than 6g of salt in them. Tesco’s stuffed crust cheese feast takeaway pizza had the most salt of any supermarket-bought one, at 7.2g, while the Co-op’s Loved By Us feta, olive and char-grilled vegetable pizza had the least, at just 2.4g.

Cash is concerned that some pizzas, such as Sainsbury’s thin and crispy cheese and tomato pizza, contain even more salt than when they undertook a similar survey in 2012, despite the food industry being urged to reduce salt content.

“Most of us aren’t aware of how much salt we actually eat on a daily basis, and thus the danger we are putting ourselves in,” said Sonia Pombo, a Cash nutritionist. “With three-quarters of our salt intakes coming from processed foods such as pizza, how are any of us able to choose a healthier diet?”

Pizza and Burger are among the two most popular food inventions in human history. What if you could combine the two?

Canadian-based pizza chain, Boston Pizza has done exactly that and recently added a new menu item called “The Pizzaburger”.

As the name implies, the dish combines the two popular comfort foods. The meal made a debut on April 1st, leading many people to believe the announcement was an April Fool’s joke.

However, the menu item seems to be real and available in two choices – the Pepperoni & Bacon Pizzaburger and the Five-Cheese Pizzaburger. Both are constructed in virtually the same manner plus or minus the toppings.

A half-pound prime rib burger is smothered in sauce and mozzarella, but instead of having a traditional bun, a hand-pressed pizza dough wrap envelopes the meat and pizza makings, topped with lettuce, tomatoes and pickles.

Pizza makers are always trying to stand apart from the competition. 

One restaurant owner in Zurich, Switzerland had come up with the idea of adding a minor quantity ofpoisons from homeopathy-remedies to his pizzas. 

But the health authorities eventually banned the alternative pizza which contained snake and spider venom.

Invented by entrepreneur Claudio Torghele, Let’s Pizza machines were initially designed and manufactured in Northern Italy. Customers choose between up to four kinds of pies, and watch through windows as the machine adds water to flour, kneads the dough, layers on the sauce, assembles the toppings, and bakes the pizza in an infrared oven in just 2.5 minutes. There are fun windows so customers can watch their pies being made. It can produce 90 to 100 pizzas before it needs to be refilled.

In a piece for The Gate, writer W. Andrew Powell (who shot the video above) said, "In all my travels, I have never seen anything like it. … While it’s silly and not exactly the best pizza you’ll ever eat, it’s still amazing, and kind of fun." But it still has to be better than the slices sold for $1 at some NYC pizza joints.

The machines are available in Italy and the UK, and, according to a 2012 interview with A1 Concepts’  CEO Ronald Rammers, they may soon be making their way to the United States.

Scientists design pizza with THREE-YEAR shelf life as luxury ration for front line US troops

A pizza with a staggering three-year shelf life has been developed to satisfy hungry US troops. While Uncle Sam’s soldiers may claim to be fighting fit, it seems they just can’t do without a slice of the popular convenience food. And faced with the demands of soldiers posted abroad who were reportedly desperate for pizza, scientists at the Natick Combat Feeding Directorate got to work.

The task proved a particular challenge, but they have now come up with the ‘shelf stable pizza,’ which is now in the final stage of taste testing. The new extra-long lasting version is likely to shortly be added to the American Army’s menu of MREs, which stands for ‘Meal, Ready to Eat.’

Jeremy Whitsitt, of the Army Natick Soldier Research, Development and Engineering Center, said: "Since the dawn of time, almost, pizza has been one of the most requested and sought-after components in an MRE." MREs are nutritional staples for combat troops engaged in the battlefield and have received undesirable nicknames including "Meals Rejected by Everyone" and "Materials Resembling Edibles." But each MRE provides 1,300 calories of high fat and sodium nourishment geared specifically for active combat duty.

A new pizza with a cheeseburger crust contains a whopping 2,880 calories. Pizza Hut said the 288-calorie a slice cheeseburger pizza is a “fun treat to share” – but a half-pizza contains 72% of a woman’s daily allowance of 2,000 calories.

The Cheeseburger Pizza was first launched in the Middle East as the Crown Crust Carnival and features mini burgers with mozzarella, embedded in the crust with any topping for £2.50 more than a traditional deep pan.

A Pizza Hut spokesman said: “The Cheeseburger Pizza is just one item from our menu and is designed to be an enjoyable, fun treat to share with family and friends with 288 calories per slice. This is the latest in our crust innovation – which is what we are famous for. Our menus offer a broad choice, including pizza, pastas and salads, and we are committed to producing a wide range of fresh, high quality food which can be enjoyed as part of a balanced diet.”
