Chicken and Cheese Bites

Makes: 22-24
Serves: 4-6
Calories per bite: 100
Fat per bite: 6g 

·         400g minced chicken or turkey

·         150g fresh white breadcrumbs

·         100g mature Cheddar, grated

·         1 tablespoon mayonnaise

·         1 teaspoon dried thyme or 2 teaspoons fresh thyme leaves

·         1 clove garlic, peeled and crushed, optional

·         Salt and freshly ground black pepper

·         1 medium egg

·         TO SERVE:

·         6 tablespoons mayonnaise

·         1 clove garlic, crushed

·         Juice of ½ lemon

·         A few oven chips and green salad

1. Put the chicken in a bowl with 100g of the breadcrumbs, the grated cheese, mayonnaise, thyme and garlic, if using. Season and mix together well.

2. Shape the mixture into golf-ball-size rounds. Beat the egg in a bowl, put the rest of the breadcrumbs on a plate. Dip the balls in the egg, then in the crumbs to coat them lightly. Put the balls on a greased baking sheet and chill while the oven heats up to 180 C. Cook for 20-25 minutes until cooked through.

To serve: mix the mayonnaise, garlic and lemon juice together and serve with the chicken and cheese bites – hot or cold, with a few chips and salad.

Not suitable for freezing, but can be prepared the day before serving and kept chilled before cooking.

Frozen Millionaire’s Peanut Butter Squares

An indulgence for the whole family!

makes: 36 squares
preparation: 30 min
microwave: 1 min
reezing: 3-4 hours

Ingredients:

Base:

–        200g digestive biscuits

–        100g butter, melted

Filling:

–        1 tub (1,8 litre) vanilla ice cream

–        500ml (2c) salted large peanuts

Topping:

–        1 can (385g) caramel

–        180g dark chocolate, roughly chopped

–        125ml (½c) cream

Preparation:

1.     Line a 23cm square cake tin with cling film, leaving some hanging over the sides of the tin. Remove the ice cream from the fridge to soften.

2.     Base: Blitz the biscuits in a food processor or bash them into fine crumbs with a rolling pin. Add the butter and mix well. Press the mixture firmly onto the bottom of the prepared cake tin and chill in the fridge until needed.

3.     Filling: Spoon the ice cream into a large mixing bowl and add the peanuts. Mix well and spoon over the crumb base. Smooth the surface and freeze for an hour.

4.     Topping: Spoon the canned caramel into a mixing bowl and stir until smooth. Spread over the ice cream in the cake tin.

5.     Put the chocolate and cream in a microwave-safe glass bowl. Microwave for 30 seconds, mix well, then microwave for another 30 seconds and mix until well blended.

6.     Pour the chocolate mixture over the caramel and smooth the surface. Freeze for 2-3 hours or until firm.

7.     To serve, carefully ease the ice cream out of the cake tin using the cling film. Remove the cling film and slice into squares. Serve immediately and store any leftovers in the freezer.

The Pumi was used to herd cattle, sheep, goats and swine and today it is still used as a working dog. While driving livestock to and from pastures, the Pumi barked, moved quickly and occasionally nipped the misbehaving ones so as to keep them within the pasture boundaries. Its job was to guard the farm too, as a handy, loud and enthusiastic alarm system.  

Most Pumis are born black and start graying at the age of 6-8 weeks. Their coat is curly, thick and of medium length. The Pumi’s trademark is its lively and pointed ears. Pumis are very protective towards their family. The lively and active dogs bark easily, but they are also easy to train.

There are 9 major Hungarian dog breeds. They all have distinctive features and their history go back more than 1000 years.

Komondor or the Hungarian sheepdog is a large, white-coloured dog with a long, corded coat. Komondors have a natural guardian instinct to guard livestock and other property. The Komondor breed has been declared one of the country’s national treasures. Komondors are sometimes referred to as “mop dogs”; the corded white coat of the Komondor is about 20-27cm long resembling dreadlocks – or a mop.

The Kuvasz is another ancient livestock dog breed. This large, white dog is intelligent, intensely loyal and patient. They are strictly working dogs who think and act independently, so they are for experienced handlers only. During the 15^th century, the Kuvasz became a popular and prized animal; King Matthias Corvinus was especially fond of them. Later, their popularity waned and by the end of World War II, nearly all of them were killed by invading soldiers, as they had the reputation of protecting their owners. After the near extinction, however, breeding continued

The Magyar Agár is a sighthound originating in Hungary and Transylvania. They have a long, elegant body and a wedge-shaped head. The breed is affectionate and docile and usually well behaved around children. The Magyar Agár is easy to train, intelligent and their adaptability means that they can live comfortably in apartments as well as outdoor kennels.

The Mudi is a herding dog breed, closely related to the Puli and Pumi. The dog’s coat is wavy or curly. The Mudi is a versatile farm dog, clever, keen, active and very loyal. The breed can live outdoors and indoors as well, but it needs lots of exercise.

The Puli is a small herding and livestock guarding dog known for its distinctive corded coat. The curls are similar to the dreadlocks of the Komondor. The colour of the Puli is usually black, but there are gray and cream Pulis as well. The breed is intelligent and active. They do best when they can live outdoors, because they need lots of exercise. The Puli is friendly and good with children, but it is also a sensitive breed. Facebook founder Mark Zuckerberg owns a Puli, its name is Beast and it has its own Facebook page.

The Transylvanian Hound (Erdélyi Kopó) is also an ancient dog breed. The strong, medium-sized dog was used for hunting. It has a black body with tan and white markings on the muzzle, chest and extremities. Its tan eyebrow spots are distinctive features. Its coat is dense and shiny. The ancestors of the hound came with the invading Magyar tribes – just like the Kuvasz. Although a popular and widespread hunting dog, it was almost extinct at the beginning of the twentieth century. The Transylvanian Hound is able to tolerate rough weather conditions. The breed is courageous and good-natured.    

The Vizsla is a medium-sized sporting dog, a natural hunter and a very trainable dog. They are lively, gentle, affectionate, fearless, and sensitive. They are robust and strong, but lightly built and lean. Their coat is a solid golden-rust colour, but their coat is not thick enough for them to be kept outside. The Vizsla forms a close bond with its owner, children, even strangers. They are excellent swimmers and as all hunting dogs, they need lots of exercise to remain healthy. A close relative of the Vizsla is the Wirehaired Vizsla. Their coat is wiry, strong and dense and they have strong eyebrows.

There are as many as 10incredible national parks. Here we will have a look at a few that should not be missed.

Hortobágy National Park (Established 1973)

An 800 square kilometre World Heritage Site in eastern Hungary filled with history and part of the Great Plain of Hungary. It was home to a unique shepherding culture. You can visit the Shepherding Museum to find out more about them. There are landscapes such as wetlands, marshes, alkaline pastures, and meadows. The wetlands give home to hundreds of migratory birds. The park is an archaeological site, one of the first settlement sites of nomadic groups arriving in 2000 BC. If you like walking, try the Tisza Lake Water Nature Trail.

Aggtelek National Park (Established 1985)

With its many cave systems, this park in Northern Hungary is in the Gömör-Tornai Karst Region and is a UNESCO World Heritage Site. Underground caves are filled with stalactites and stalagmites. Baradla Cave part of which is under Slovakia should not be missed. The park offers guided tours, and there are also trails for bike rides, hiking, or horse riding. Handcraft programmes are on offer and traditional bread making.

Kiskunság National Park (Established 1975)

An important nature reserve in between the Tisza and Danube rivers it covers an area of 572 square kilometres. It was made a biosphere reserve by UNESCO. With lakes, alkaline ponds, marshes, and plains it is home to rare birds. The staff at the visitor centre will be happy to tell you what to look out for.An interesting natural phenomenon to see is the sand dunes.

Danube-Ipoly Nature Park (Established 1997)

One of the most popular parks, this is located in the tourist area of the Northern Danube, in the city of Esztergom. It starts north of Budapest and goes as far as the Slovakian border covering 600 square km. It has lots of caves and is home to flora and fauna. The park is protected along with all of the wildlife and plants within it. Hiking and camping are great and there are other things to do nearby – visit the ethno village of Ócsa and the Szemlő-hegyi cave.

Danube-Dráva Nature Park (Established 1996)
The Danube-Dráva Park is in south west, near the city of Pécs. It is around 490 square km, located between the rivers Danube and Dráva which means you can see a lot of water wildlife. It is famous for outstanding natural beauty and biodiversity. It is home to over 400 species of plants and animals. The period from June to September is perfect for camping when you can look out for black storks and wild geese. The Dráva Gate Visitor Centre and the Abaliget Cave and Bat Museum are good places to visit.

Őrség National Park (Established 2002)

This beautiful park is a mixture of alpine forests, peat bogs, moorland, and meadows in the south west corner of Vas County which borders Austria. It is spread over an area of 440 square kilometres. Visitors can go to local villages, where houses were built in the traditional style. The park protects rare species of flora and fauna. Hiking along the many forest trails is a popular activity, and the park is open to the general public all year round.

Bükk Nature Park (Established 1977)

Around this 423 square kilometre park in the Bükk Mountains in Northern Hungary, you will find a varied landscape with pretty mountain towns and roads, forests, lots of birds and wildlife such as wolves, falcons, bats, and places to camp. In fact, many species of plants and wildlife can only be found in this part of Hungary. The mountain roads are good for the cyclist and there are lots of hiking trails for walkers. As well as the wonderful waterfall at Szalajka-völgy thereare also prehistoric limestone caves to visit.

Fertő–Hanság National Park (Established 1991)

Situated in North-West Hungary the 239 square kilometre park is rich in natural features and is listed as a World Heritage Site. The Hany Istók nature trail follows the footsteps of Hany Istók, a mythical creature of folklore. The Esterházy Bird Observation Centre is interesting with hundreds of birds and insects. Saline lakes have lookout towers to observe the incredible views of the surrounding areas.

“This chocolate biscuit cake is Her Royal Majesty the Queen’s favourite afternoon tea cake by far,” chef Darren McGrady, The Royal Chef and former personal chef to Queen Elizabeth II, told TODAY Food. “This cake is probably the only one that is sent into the royal dining room again and again until it has all gone.”

“It is her favourite cake that she eats until it is all gone,” says McCrady. “If there is anything left when she has it at Buckingham Palace, it then goes to Windsor Castle, so she can finish it there. I used to travel on the train from London to Windsor Castle with the biscuit cake in a tin on my knee. It was half eaten.”

There’s another member of the royal family who is a fan of this cake too: “This chocolate biscuit cake was Prince William’s groom’s cake at his wedding. The reason he chose it is that he used to go to tea with the Queen and he got a taste for it. That is when he started liking it.”

The rich dark chocolate cake has a lovely crunchy texture thanks to the addition of classic English cookies called “Rich tea biscuits”. A layer of decadent chocolate frosting is the perfect finishing touch.

Ingredients:

CAKE

– 200gr Rich tea biscuits or sweet cookies

– 100gr unsalted butter, softened

– 100gr dark chocolate

– 200gr dark chocolate, for coating

– 25gr chocolate, for decoration

Preparation:

1. Lightly grease a 15 cm x 6 cm cake ring with the butter and place on a tray on a sheet of parchment paper.

2. Break each of the biscuits into almond size pieces by hand and set aside.

3. In a large bowl, combine the butter and sugar until the mixture starts to lighten.

4. Melt the 100 gr of the dark chocolate and add to the butter mixture, stirring constantly.

5. Add the egg and beat to combine.

6. Fold in the biscuit pieces until they are all coated with the chocolate mixture.

7. Spoon the mixture into the prepared cake ring. Try to fill all of the gaps on the bottom of the ring because this will be the top when it is un-moulded.

8. Chill the cake in the refrigerator for at least 3 hours.

9. Remove the cake from the refrigerator and let it stand.

10. Meanwhile, melt the 200gr of dark chocolate in a saucepan on the stove top over low heat. Slide the ring off the cake and turn it upside down onto a cake wire.

11. Pour the melted chocolate over the cake and smooth the top and sides using a palette knife.

12. Allow the chocolate to set at room temperature.

13. Carefully run a knife around the bottom of the cake where the chocolate has stuck it to the cake wire and lift it onto a tea plate.

14. Melt the remaining 25gr of chocolate and use to decorate the top of the cake.
