Blueberry & Raspberry Jelly Cups
makes: about 6 cups
Ingredients:
- 375ml (1½c) blueberries
- 125ml (½c) raspberries or strawberries
- 125ml (½c) water
- 1 packet (80g) raspberry or cherry jelly powder
- 250ml (1c) strong, warm rooibos tea
- TO FINISH extra fresh blueberries edible flowers (optional)

Preparation:
- Keep 6 small glasses, jelly moulds or jars handy.
- Put the blueberries, raspberries or strawberries and water in the bowl of a food processor. Pulse until smooth.
- Transfer the mixture to a microwaveable dish and microwave on high for 2-3 minutes or until it starts to boil. Remove and set aside.
- Add the jelly powder and rooibos tea to a deep mixing bowl and stir until the jelly powder has dissolved. Stir in the berry mixture and divide between the glasses, jelly moulds or jars.
- To finish leave the jelly in the fridge for an hour to set. Add a few fresh berries to each serving and leave to set for another hour or overnight.
- Finish with more blueberries and edible flowers (if using) and serve.
