Chicken Burgers with Cherry Tomato Sauce

Ingredients:
for the cherry tomato sauce:
– 30 ml olive oil
– 250 g small Roma cherry tomatoes
– salt and freshly ground black pepper
– pinch of brown sugar
– finely grated Parmesan cheese (optional)
for the chicken burgers:
– chicken breast fillets
– 30 ml olive oil
– salt and freshly ground black pepper
– 2 onions, sliced
– 4 hamburger rolls, halved
– 100 ml chunky cottage cheese lettuce leaves
Preparation:
- Heat the olive oil and fry the tomatoes over very high heat until they burst. Season with salt, pepper, and sugar.
- Mash the tomatoes with a potato masher or fork and stir in the Parmesan cheese (if using). Keep the sauce warm while you prepare the burgers.
- Put the chicken breasts on a clean work surface and beat gently with a meat mallet or the heel of your hand. (The flatter the fillets the faster they’ll cook.)
- Heat the olive oil in a frying pan and fry the fillets until golden brown and done. Season with salt and pepper to taste and remove from the heat.
- Fry the onions in the same pan over high heat and season with salt and pepper.
- Spread one half of each roll with a little cottage cheese and top with lettuce leaves, a chicken breast, fried onions, and cherry tomato sauce.
