Ingredients:
500g store-bought, ready-prepared gnocchi
for the sauce:
– 60g basil pesto
– 100g mascarpone cheese 2 tbsp olive oil
– sea salt and black pepper, 50g parmesan cheese and parsley to garnish
Preparation:
1.Cook the gnocchi according to packet instructions, drain and set aside.
2.Place the pesto in a bowl, add the mascarpone cheese and stir well to combine.
3.Pour the oil in a frying pan and gently heat, add the gnocchi and pan- fry until golden. Remove pan from the heat and stir through pesto mixture. Season with salt and black pepper.
4.To serve: Divide the warm gnocchi between four bowls, sprinkle over parmesan and top with sprigs of parsley.
