Instructions

  1. Heat the milk in a saucepan over medium heat. Add the sugar and a tiny pinch of salt.
  2. When the milk is warm, sprinkle in the semolina slowly, whisking constantly to avoid lumps.
  3. Simmer for 3–5 minutes, stirring all the time, until the mixture thickens into a smooth, creamy pudding.
  4. Remove from heat and stir in the vanilla if using.
  5. Serve warm with your favourite topping — cocoa powder is the classic, but cinnamon or a spoonful of jam works beautifully too.

Tips for perfect texture

  • For a thicker pudding, add an extra spoon of semolina.
  • For a softer, silkier version, reduce the semolina slightly or add a splash more milk.
