Clafoutis (French pronunciation: [klafuti]) is a baked French dessert of fruit – usually berries – arranged in a buttered dish and covered with a thick flan-like batter. The clafoutis is dusted with powdered sugar and served lukewarm. A traditional Limousin clafoutis contains pits of the cherries, as the pits release a wonderful flavour when the dish is cooked. If the cherry pits are removed prior to baking, the clafoutis will be milder in flavour. The clafoutis comes from the Limousin region of France and while black cherries are traditional there are numerous variations using other fruits including red cherries, plums, prunes, apples, cranberries or blackberries.
Ingredients (for one ovenproof dish):
– 4 eggs
– 1 cup sugar
– 1-cup flour
– 1 1/2 cups milk
– ½ pint of blueberry
– ½ pint of raspberry
Preparation:
Preheat the oven to 350 degrees F. Grease an oval ovenproof dish about 13 inches (33 cm) long. In a mixing bowl, whisk the eggs and 1 cup of the sugar. Stir in the flour. Whisk in the milk to form a smooth batter. Place the blueberries and raspberries in the ovenproof dish. Pour the batter over the berries and place in the oven. Bake for 40 to 45 minutes or until it is sponge like. Remove from the oven and cool for 5 minutes before serving. Serve the clafoutis warm. Garnish with powdered sugar.
