Caramelised Pineapple

· 1 ripe pineapple, peeled, cut into at least 8 rings, cored and slices halved
· 125g light muscovado sugar
· 90g unsalted butter
It’s best to make this in 2 batches. Toss the pieces of pineapple in the sugar and fry in the butter until the sugar turns to a bubbling, golden caramel. Remove with a slotted spoon. Leave to cool a little before eating. This can be made in advance, although the caramel will soften with the juices from the fruit. Not suitable for freezing.
