RECIPE: Lime Chicken Fajitas

Lime Chicken Fajitas

for the chicken:

zest and juice of 1 lime
2 tablespoons olive oil
2 level tablespoons chopped fresh oregano
1 clove garlic, peeled and crushed
4 skinless chicken breasts

for the wraps:

4-6 tortilla wraps, warmed
some Guacamole, Tomato Salsa and Garlic Cream

1) Mix together the lime zest and juice, olive oil, oregano and garlic. Coat the chicken in the mixture, place in a covered container and leave to marinate in the fridge overnight, or for at least 4 hours. Turn the chicken in the marinade occasionally so that it absorbs the flavors evenly.
2) Cook the chicken on am medium-hot grill for about 10-15 minutes, turning it occasionally so that it cooks evenly.
3) To serve cut the chicken diagonally into strips. Place some shredded lettuce in a line across the centre of one of the wraps, top with chicken and add some of each of the dips. Fold up the bottom of the tortilla and then wrap the sides round to encase the filling. The art is to not use too much filling; otherwise the wraps will not stay securely closed. Serve immediately.
